Cabernet Sauvignon
Starting with a bouquet of rich plum and wild berries, this wine is balanced, with a supple texture and approachable grip. It has a concentrated flavor profile of black fruit with a hint of chocolate and brown spice. With notes that are complex, full-bodied and expansive on the palate it ends with firm tannins and a dash of espresso.

Winemaker’s Notes:
Harvested on October 26, 2007 at 25.5 brix sugar, the wine spent 21 days fermenting before being put to rest for 18 months in the finest new French oak barrels.
Vintage Notes:
Rainfall was low during the winter months and “bud break” arrived early with the warming temperatures of spring. Bloom also came early with near perfect weather throughout spring. Summer temperatures for the most part were temperate and consistent. The vines matured more rapidly, canes lignified earlier and the period from veraison to harvest was shorter than our historical average. Overall fruit was excellent and 2007 is considered one of the best vintages of the past decade.
